should I stay or should I go

my manager (the CEO) of the company I work for makes me work long hours a few times and has made me work on the weekends a couple of times. He often chases me to speed up my work I am currently doing adminstrative work which I had not originally signed up for. I thought my role was going to be more technical and that I would get to do some coding too. I have recently graduated from a University in the UK which is highly renowned with an electronics engineering degree and a grade of 2:1. The job pays 26k (remote) and recently I have been getting very stressed by the amount of work they are piling on to me. I submitted my resignation a couple of days back but the manager told me to stay because they still need my help and they only have 3 people working…

I submitted my resignation a couple of days back but the manager told me to stay because they still need my help and they only have 3 people working on this project (there's about 100-200 people in the company). He said that we can discuss this again later and that he would help me further my career. I have agreed for now, but should I believe him? What would you do?
