Sign on bonus ideas

So, I’m about to interview with an organization I don’t care much for – and if you knew which one it was, by far there’s nearly no discussion there – and I have seen an offer from them in the past for a different (lower) position. That being said, the org offers you a sign on bonus with stock options that if you leave before X years (usually 4 years) you are required to forego those earnings. I was thinking about this recently and decided that wouldn’t the best thing for me to do is take their bonuses and invest them on the side such that if I leave paying that back will still result in net profit over time, or is there something better to do with that money? Probably worth noting, I’m not holding my breath trying to stay with this org for a decade or anything.
