starting work with a pizza franchise. trying to prevent me from sueing them

In one of the documents I have to fill out. There is a arbitration document they want me to fill out. Essentially it states that I lose all rights to sue them if something were to happen. The only thing I can take them to court for is for anything that I'm protected like the civil rights. If I do take them to court I have to go through litigation with them without a lawyer and need to pay for their legal fees. What a joke.
