Thinking about quitting my job for a hot dog cart

I live in a very rural area, in a very small town. We get an almost excessive amount of summer tourist traffic(think tens of thousands of people from June through August) thanks to the nearby Boy Scout camp that's relatively well known in niche circles. My manager is a great person, but she's old and should be retired. The next logical manager is also up there in age but is in slightly better physical shape. After those two retire, there next choice for manager is from one of like three shitty cooks who can't be assed to even make sure the kitchen meets health codes and that everything is properly refilled. Now, one of those things is closed and being turned into a gym, one is a laundromat, and the other two are the local grocery store / gas station and the wannabe diner where I currently work. He only took over because his dad bailed on the business without warning, and his granddad who owns everything is too old to really run the numbers. Boss is also really scatterbrained, but it's not malicious.

He said he would be willing to start transferring me from the diner to the store after the summer, but we lost one cook to the gas station at the other end of town after she took a week and a half off for a “potassium deficiency”(she collapsed at work on Sunday two weeks ago). One part timer was fired because she kept making excuses for not showing up(“I gotta practice for basketball season” when she was only working weekends to begin with) and the other I guess quit? The gas station at the other end of town upped their base rate for cashiers to like $15 so everyone who doesn't know how much worse that place is bailed. So I'm not sure if that's even going to happen anymore.

I've been looking at what kind of food this town is missing, and it's surprisingly simple. There's a growing number of tourists passing through who are vegan and / or on gluten free diets, but at the diner at least there's next to nothing for them(GF: grilled chicken salad or burger w/ no bun, vegan: salad w/ no meat or cheese which is just lettuce and tomato). So I thought if I could fill that void with, say, cheap hot dogs, I could make a good amount of money in one summer. Even more if I can catch the skii resort traffic that comes through in the winter.

If Boss doesn't start to swap me to the store after August, I'm planning on starting the process of getting one of these open. I'll still work for him in the winter until I know everything is up and running, but this is my exit strategy.
