To those who job hop every few years: how do you explain this in job interviews?

I know you are more likely to get better pay if you hop around different companies (or in my case, hospitals) every few years. That’s my main motivation for starting a new job every 3-5 years. But if you are asked in a job interview why you change jobs every couple of years, how would you respond? (I know companies say they value loyalty, but let’s be real).
