wage theft maybe?

Ok, it's a hard story to explain but I'm going to try the best I can. I started working for a small resteraunt franchise and the work is easy enough. After a few months I wanted to quit my second job and at the time my employer could not find workers at all. He made me an offer where I could have near unlimited hours if I would do it without being paid the overtime rate. The way he facilitated this was to make a second employee profilevin his other store and use that profile for anything above 40 hours. The reason it seemed like a good deal at the time was that all cash and cc tips in the store went to me the majority of the time, with that I was being paid as much as I would be with ot, sometimes more. He made me an offer where I could have near unlimited hours if I would do it without being paid the overtime rate. The problem now is that we got some more employees and the tip pool is diluted, also they ask me to cover double shifts when his wife does not want to work for whatever reason, if I do they treat it as something I owe them almost instead of me doing a favor and it's trash. I know all of it is illegal, tax fraud and possible wage theft, km pretty sure if I contact the dept of labor I'd get paid out. These are not good criminals, they give me pay stubs for both profiles which are both in my name somehow. I've decided I will take action but want to secure a position somewhere else first!
