Why should I bother taking more responsibilities for just a bit more?

I don't know if it's some kind of mid life crisis or if I'm getting lazy, but most of my career I've been a project manager coordinator, deputy and project manager for business change. Most of my salaried position I've never got paid more than $2000-2500 per month after taxes, I leave in western Europe. Now that I have 15+ of int exp, I could go after PM jobs, you know the kind of jobs that you need to put down your signature and engage your responsibility validating others works. The salary offered? $3000-3500 after taxes. So for a 25% bump in salary you expect me to put my responsibility, being liable and work 50+ hours per week? Nah, thanks, I'm gonna pass. But maybe I'm just lazy.
