Why should I say I’m leaving my current position?

I’ve been in my current job for 14 months and I’m not happy due to management and the view that my position can do any old menial task they give me, even if there is a department specifically for that and I already have a massive workload. They also don’t treat people fairly, there is no career progression and the salary is bottom range for my position, location and experience. I’ve decided to start looking for a new position and have a call with a recruiter today. Why should I say I’m leaving? I’ve been told never to badmouth my previous company or this will hinder my chances and I’m worried if I say my salary is too low they will low ball me. I find it really difficult not to be honest!
