Under observation because I make careless mistakes

Hi, I started a new job a year ago and it wasn't an easy road, we are 3 in my department, we're supposed to be 7 to cover the department (they lay off a lot during covid and don't want to hire more) I'm the only one that works 40h+ and my coworkers works part time because they have kids etc. A lot happened and I have trouble staying asleep at night for several weeks. I seek health professionals, I still sleep less than 4h but im getting there and also it's a long process. I make mistakes at work such “misplaced an email in the wrong category” “forgot to put someone in cc” “upload/download the wrong document” but I catch it fast so I always make sure everything's fine. My coworkers are tired of my mistakes so they complain to my manager and now I'm on a contract, I'm…

I'm planning to leave.

What should I say to the next job interview when they will ask me “why you quit your last job?” “Or why they fire you?” (If I can't find a job within 3 weeks”
