My boss actively refuses to leave a paper trail of anything regarding my mental health and complaints among other things. How can we as employees deal with a boss who won’t discuss important things via email/ messaging?

I saw another post recently here that made me realize that there may be some more other people struggling with this same issue Some background for me: Asked boss strictly for things regarding a personal conflict in the office and my own mental health be only be spoken about over email. After insisting he only discuss this with me via email, he refused multiple times and ended his last email by saying that he will be ignoring my emails regarding this in the future. Another incident was when I asked for clarification on something he was doing and why I needed to submit certain information to him. I asked him via email and got no response. Asked him in person and he gave me smack. Asked him to send an email clarifying what he had just told me, and he flat refused and walked away from me. I emailed him…

I emailed him after this including some details of the conversation (just to leave a bit of a paper trail).

Planning on quitting soon anyways, just wondering if there are any legitimate ways that we can go about these sorts of scenarios.
