Advice: Creating a budget for a year (thinking about quitting)

I work up to 30 hours a week, remotely, as an executive assistant. The pay rate is pretty decent for the area I live in because the company is based in the DC metro area and when I interviewed a couple of years ago, the schedule was flexible and the owner was supportive of me finishing my degree. For the last year and a little, however, every time I register for classes and set up my work schedule/hours, some new high priority project gets dumped into my lap that only I can do (apparently) and I end up missing classes, not getting my studying done, or just withdrawing from the classes without a refund. I've literally spent over $10,000 in tuition alone trying to take classes only to have my job sabotage my education. I need the income because I don't get financial aid anymore (it was yanked after the second semester of this situation) and I didn't want to spend the money I have invested towards a down payment on a house after graduation. I've tried setting boundaries at work and my boss tends to ignore them whenever he gets an idea in his head about something so I'm now thinking about quitting and living off the money in my investments so I can just get to graduation with my mental health and sanity intact. I'm exhausted, I'm wasting money, and eventually I'll get kicked out of my major so I can't keep going like this. So I'm requesting advice for how to budget and pay my bills for a year (preferably in advance where possible) and keep the rest of my bills low so I can just do school. Ballpark that I have about $25-30k I can make happen and I live in central Florida
