advice on how to go to a job interview without my boss finding out

I'm a preschool teacher and decided I can't stand the place I work. I'm supposed to be the administrator of my program, but the principal won't let me do any of the stuff I'm supposed to do other than teach the class. There are constant arguments with staff. I have no support system at all. I'm alone with the students when everyone else has an aide. I have 2 children with behavior issues and special needs, and the school won't help me at all. I'm pretty sure they're spending my programs money on shit they're not supposed to. And to top it off, the principal believes I should treat her grandson (my student) better than everyone else. Today I got yelled in front of staff and students because her grandson was late and I offered him yogurt, a banana, milk, and a granola bar instead of the breakfast burritos that were served and put away. She made me go get the child a cold burrito to eat. Children went home and told their parents that I got yelled at and the principal made me give the child cold food. 3 of the 8 parents contacted me after class to ask about this because their children told them what happened and that the principal was screaming

I'm applying for a new job as soon as I get a letter of recommendation, which will hopefully be tomorrow. When I quit, there's a good chance they'll have to close their center because there is no one to cover or take over for me. Literally, no one has the requirements at the school to be left alone with the preschool students except me. I don't want to let them know that I'm quitting until I have my next job lined up because it will cause more issues.

The job I'm applying for asked me to apply 3 months ago. They pretty much guaranteed me the position. I still need to interview though. I work during the time they're open, so I'm not sure how to go about doing the interview. Do I lie to my current employer and say I have an appointment, and risk them finding out since it's another preschool? Or do I just tell them upfront that I have a job interview and risk being treated like shit?
