are they allowed to keep hourly employees over their scheduled time?

I'm a waiter and sometimes my job schedules, 4-11:30pm. We close at 10 but we can't do certain closing outs before the guests leave which can be up to an hour after close. Until everyone's outs are done, no one can leave. So while I may have gotten my out down, another person could still be working. I don't mind helping until it goes over 11:30. There are times where they expect 1-2 people to do 8 outs instead of maybe 3-5 people doing 8 outs, and still expects us to finish even past 11:30. I don't think it's fair that they expect expect us/me to do the work of 3-5 people and still leave on time. Are they legally allowed to do this? Regardless, it doesn't matter but I would like to know just for knowledge sake.
