Boss decided he’s the one who gets to control my availability

I’m a manager at a coffee shop. I’ve worked there for about 7 months. My schedule has always been four days on, three days off. 30 hrs a week. I was hired with that availability. I close the store every shift, and we close at 4:00 PM. Im a good manager, and the stores revenue has tripled since I got there. So a few days ago, the VP of operations decided we’ll start closing at 6:00 PM. He went right over my head. He scheduled me for five days a week, 40 hours total. Not only that, but he wants to cut labor, so now I’ll be alone for the last few hours of the day (anyone who has had to close a restaurant alone knows it takes forever and is pretty much impossible). A few days earlier, I specifically said I need at least two other closers every day.…

I made it quite clear that I won’t accept this, and the VP actually said “I don’t think you’ll quit. You’ll do it.”

Any help figuring out some ways to fuck him and the company over?
