Fired for apparent theft

Ok so I used to work on aircraft. I made two mistakes on installing panels, but I was an apprentice so my work needed backsigned by someone who has their license AFTER they check my work. As well as an inspector has to final the work too. Well, I forgot 4 bolts on a skull cap, no one checked my work, and the plane went out of the facility without those bolts in it. And in reality, those bolts weren’t a big issue, the panel was still well secured by like, a shit ton of screws. It came back as a QIR on the company, I was put on paid leave for three weeks, well over those three weeks, I was accused of theft, we have what is basically a convenience store in our breakroom. I hit a bad spot when it came to money, so, I would get things and if I couldn’t afford it, I’d put it in my notes app and when my check deposits I would scan those items and pay it back. They fired me for it. Also it turns out several people went up to hr and gave statements saying that I was just going up to the self checkout machine, scanning the food and drinks, and then just hitting cancel. What was that phrase again? “Snitches get stitches.” I believe I know who went to HR. What I had done was not legally considered stealing, and I had told them how I keep track of what I get and that I had thought I paid for everything. If there is anything left I would ask that I be able to simply pay it back and we can move on and since it’s that much of an issue it will not happen again. Should I have still been fired?
