How to politely decline working five days instead of four

I like my job as much as one can, I work graveyard shift with my fiance at a restaurant, just him and I and it's super lax. Only seen a manager 4 times including being hired working there for a year. Today my manager messaged us and asked if “we would consider working 5days a week” because she needs to move the other 3rd shift person who works the days we don't “strictly to second shift” my boss is a nice lady but I'm struggling with how to say “no” in a way that isn't my gut of “no, we'll quit” lol Like I know myself pretty well at this point, any time I've had a five day a week job, I've woken up one day and I snap, just can't do it anymore, and ghost those mother fuckers and start applying for a new job rather than go back…

Like I know myself pretty well at this point, any time I've had a five day a week job, I've woken up one day and I snap, just can't do it anymore, and ghost those mother fuckers and start applying for a new job rather than go back to the one I had. It's been a consistent pattern for the both of us. So this time I just told them I only wanted four days a week, and like that I've remained sane enough to be there a year without crying at the thought of returning in the next day… Dramatic I know but it's true
