How to politely opt out of a position?

So I thought going back to my old position as a baker would be a wise decision, however the shifts fluctuate too much for me and I prefer to have shifts that are the same everyday to keep a steady sleep schedule as I've struggled with that in the past and became a sleeping pill addict due to it. Also a coworker I had major issues with also works there, I was under the impression he wasn't working there anymore but my mom told me he's “excited for his girl to come back”. I'm financially stable enough to support myself for the next month or so and have applied to two other jobs that I will most likely get accepted into due to prior experience and I'm wondering if you guys think it would be a wise decision to opt out now before I let her down and end up…
