I have a love/hate relationship with this advice

Love the advice “if it's neither, quit.” This is absolutely true. But IMO it should always be BOTH. Let's stop with the notion that people learning their jobs deserve to be paid poorly (or not at all, as with some internships). If you're working, and that includes training in your role, you should be paid fairly. PERIOD. Expertise in a role should come at a premium for employers, let's stop pretending it should be the baseline for earning a living wage.
