They say it's because we get to take the certification with us if we quit or something. I think it's bullshit, personally. I think it should be illegal for them to make us take a test off the clock. Especially when I have to use one of my two only days off to take said test. (I'm not sure if it's ServSafe or the Food Safety Manager exam).
