College makes it clear I shouldn’t pay their student for working weekends

Not sure if this fits here but kinda feels like it.. I run a small paintshop in the village I live in in England (cars, bikes ect), a young local who goes to college asked if he could do his work placement at my shop as its local and would save him money. I contacted the college and agreed as they'd refund for any of the products used on his private project for the course. He started in January and had really put in some effort that I'd honestly hire him once he's finished college. Now to the issue. I had a fairly large job come in and it happened to be a car the boy has a particular liking for and he offered to stay late in his own time and come in on the weekends to help out. How Long Do I Have to Report an Employer for Wage Theft?

IDK if this is the right sub, but I had an awful employer in 2018 who took advantage of me in so many ways. My breaking point was working nearly 120hr on a 2-week paycheck and realizing that she didn't pay me over time. She has two businesses on main street directly across from one another. She split my hours between both of them, so my overtime wasn't calculated (she also wrote in the employee handbook that they didn't pay overtime, which I have since realized is highly illegal. Also, I never signed a new employee handbook since I had previously worked for her in high school). She said I worked 40 hrs at one store and the rest of my hours at the other, even though I was only at one location for, at minimum, an entire week, at most 75% of that pay period. carpentry apprentice aus

Is it normal to just be doing pretty much labouring or be unsupervised. I'm keen to learn but I feel like all I'm doing is digging holes or gyprocking. I don't need constant supervision but I want to be taught properly how to do the jobs I'm being told to do. Is this normal or am I being soft? I'm 23 so I'm an adult apprentice and I'm a quick learner but I feel like I'm expected (because of my age) to just figure it out. I was just moved hosts because apparently I wasn't learning but I was never taught. I just want to know if I'm wasting my time and the whole industries like this. I hate labouring, and I'm cheaper than a labourer as an apprentice and I can't help but think that's all this is.
