I work in the kitchen, so we get 100% of the tips from catering and take-out. Rather then give them to us day of they write us a check every two weeks with a lump sum of all our tips. I know something fishy is going on because whenever the manager writes the checks they are what we all expect, but when the boss man has to write them we are all always shocked by how low they are. For example this two week period we had 100+ caterings almost everyday including a wedding, crazy busy in house, aswell as several days with no server in the restaurant (kitchen staff covered so all the tips got split evenly amongst us) so our tip out should have been massive and we where all excited but some fucking how it was lower then the previous two weeks, where we had next to no catering and no kitchen staff covering FOH. I don't know how I would even get proof that he's skimming off our money but I know in my gut that he is. Worse still is he's a millionaire with several properties, so he has literally no need to steal from us. He recently acquired the business and I asked around and apparently before he bought it the tip checks where consistently higher then what they are now. How do I even address this?
