Promotion to management, still on minimum wage

TLDR; how and when can I negotiate a higher salary? . I started to work two months ago at a small but growing restaurant franchise in France. I asked the owner for more hours, as I'm currently on 19 hours, five days per week, occasional split shifts. It's only just enough to pay my bills. . He came back with a proposition to be manager of the third location they're opening in January. I'd work 30 hours, four days per week, no split shifts or weekends. It's the best set of hours I can get in the company. It's also a great opportunity for experience managing a team and for future jobs. . The only thing is: it's still minimum wage. So I'd increase from about €975 per month to about €1175 net, plus between €50-150 monthly “bonus” depending on certain targets. . Honestly, I've seen how my current manager…

Honestly, I've seen how my current manager works, her job is way more stressful than mine, and the job deserves more. Otherwise I'd be happy to take it without question.

But, it's the only option they've given me, and I have to take it if I want to increase my salary without looking for another job.

The owner is also very, uh, careful with his money, so it'd be tough to negotiate now or at any point especially when he's giving me a good opportunity like that after just two months, and knowing I can only do it for 6-8 months, as I'm going back to school next year.

Is it worth trying to negotiate now or do I try further down the line? Maybe some other perks instead of higher salary? A new job entirely?!
