Quitting during training.

Hello. I'm Australian and I started a job in a salon a little while ago and was still in training for $70/day for 5 days before I get $20/hr. After a few incidents and me knowing I should be earning more amongst a few issues (no weekend rates, paying $2 under minimum wage etc.) I have decided to cut my training short 3 days in. 'Hi, (boss). Thank you for this opportunity, but I don't think this job is the right fit for me. Let me know what the next steps are, if any, and please tell me when I'll receive my paycheck for the 3 days training at $70/day. Thank you.'

I put my pay and days worked in detail because I thought if I need to get fair work involved it would be better to have everything I'm owed in writing and her response will cement that she knows and agreed to this wage.

But if she responds negatively what can I do? I don't think she'll be wanting fair work messing around with her less than legal job over $210 so I'm hoping she'll just pay with no issues but where is the best place to escalate?
