Should I file a complaint?

Is this something that I should take action on or leave alone? I am currently employed in a nursing home in the dietary department, and my coworkers have been complaining about the company altering our hours. For example, my coworker is scheduled from 4-8:30, and she does her entire shift, clocks in at 4, clocks out at 8:30. But, they go back into the system and clock her out at 7. She still hasn't received her paycheck from 2 weeks ago. We're severely short staffed, so the majority of us have to do double shifts. 2 of my coworkers work from 6:30 to 8:30, and the company has been clocking them out early when they do those shifts. When we started to complain about it, the company locked us out of viewing our hours that we worked. What do you guys suggest I do? Should I call the department of…

I am afraid of them altering my hours because I've done 3 doubles this week for them, and I do not want to work for free. I've been documenting my punch-outs just in case they do alter my hours.
