What can I legally do about a boss who skimps wages and would fire me and have his other workers lie for him if I told anyone?

I get paid 9 an hour at a small-town diner in Kentucky which is open only 5 to 6 hours a day. Already horrible pay, especially in this economy, but it gets a hell of a lot worse. My typical work day is 8 hours, with 3 of those hours being opening and closing the place, yet I only get paid for the 5 hours it's open. I only get to work an average of three (paid) days a week On top of that, I am occasionally asked, yet often TOLD to volunteer my time for other forms of labor my boss needs for his business. It'd be dishonest of me but under the conditions that my boss is PLACING me under, it's literally the only way I can ever afford a car so I can to go back to doordashing.
