When should I leverage a job offer?

I've been at my current job over 10 years. Found out recently that they were paying me $10k less per year then brand new hires. It tool them 6 months to bring my pay up to what new hires were getting. So, I've been looking. Had a job interview today, but I doubt I'd take it. Even with more money, I'd be working more hours, get only a few vacation days for the rest of this year (I get over 30 now), and they continuously told me, “We wanna make sure you know, this is A LOT of work every day.” I still want to leverage any offer they make with my current job. They basically told me during the interview that I'll get an offer next week. My relationship with management is good. Really good. I know they want me to stay and they'd be willing to counter offer.…

So, do I wait until I have an offer in writing, or give them more time to prepare to make a counter offer? My boss is out until Tuesday, but I can easily talk to her boss with no issue.
