Why do companies still act like they have all the power during the hiring process?

I've been looking for a new job lately and every single application requires the MOST work. I'm talking 6 rounds of interviews, video questionnaires, training programs, real-work projects and more. I feel like this article I saw on LinkedIn outlines why those are all horrible things to include in your process: https://brightmatterhr.com/knowledge-centre/blogs/this-is-why-your-hiring-process-is-turning-candidates-away/ I'm currently in a role (on a soon to be ending contract) where I'm involved in picking my replacement and I know that there simply aren't enough candidates for a role like mine to be this damn picky. No wonder companies are struggling to find new hires!
