It seems like these places want you to perform farm labor for free while teaching you how to farm (maybe they're out there, but I haven't found a single one that pays). A glorified unpaid internship/farmhand, with primitive living facilities, doing hard, dirty jobs out in a field or barn. I guess it might be OK volunteering in a third world country or for a charity. But it seems dumb as hell to be doing sweaty, stinky, monotonous, and sometimes dangerous/unhealthy work for free in the US, while the farms themselves are making a profit for their owners. Dress it up however, but it seems exploitative to me.
