Best ways for quitting/cutting back work hours

So I’ve come across a new opportunity that would mean earning more, and working less, with a side benefit of cross country travel. The thing is, in order to pursue this opportunity it will likely mean cutting back my time at my current job, and potentially outright quitting if things progress well. Here’s the question: what’s the best method for cutting back on availability? What’s the best way to quit? Now, obviously it’s occurred to me to just tell my boss I’m not going to be available days x,y,z… and when it’s time saying I quit. But surely there’s more professional ways? Or ways with more flair? Would love to hear it!
