Employer is treating hourly employees like salaried employees, including breaking state labor laws.

I'm trying to build a case here, but they recently implemented an IT rule that blocks any outgoing email to a personal or external account. Basically, working too long without lunch breaks, expecting employees to work for comp days, no overtime, etc. I'm thoroughly frustrated and disgruntled and not sure how to proceed.
