“At-will employment”

Getting anxiety just reading posts from so-called “at-will employment” states, employees talking about being terminated without even a 2 week notice. Where is the job security? Is health insurance often tied to employment in these states? Sounds like workers in these states are being held hostage, with financial, physical and mental health all in jeopardy. Currently in my position in Norway working a government job the minimum by law is 6 months notice if employer terminates the employee, 3 months notice if the employee resigns. And healthcare is public and not tied to any kind of insurance.
