How much of what my job says is actually legal?

I work at a franchise of a retail store that I'm not currently planning to leave. However there are many red flags with the franchise practices. One, when I was hired I had to sign that I wouldn't discuss my pay with others which is federally illegal, which I knew, so I wasnt afraid of signing something that couldn't be legally enforced. Another rule is that if I quit without a two weeks notice, the franchise has the right to reduce the pay for my already worked hours to minimum wage. Thats illegal, right? Sometimes the company goes back in and edits the hours to say I've taken a break when I haven't. I know that's illegal but im not sure how to prove I did not take a break.

There are many more red flags but I can't leave this job yet. I need the $$. One last thing. They tried to threaten if our drawers were short, they'd take the money from our check. They had the gall to say that but I know they can't enforce it. What protections should I know about?
