Just why?

This is more of a vent then anything but I'm sure many of you have experienced this. Why do jobs who have approved/agreed to and signed off on a set availability always refuse to at some point stay within that availability and then look at you like your crazy when you approach them and tell them you are unavailable as per signed agreement and always have been! I mean they literally go in and override what is in the system without a conversation with you first and then act all surprised and mad when you remind them you have that agreed upon availability for a reason…..the awkward silence until it's like fine but they are not happy about it, but that's not my fault or problem, you did it to yourself!
