Manager makes me do her job, so I’m quitting

I'm the assistant manager for a spa. I have been for the past 8 months, and was doing the job of the shitty assistant manager before me, long before that. My manager has taken almost every opportunity to take advantage of me. She has left on week long trips every month and expects me to do all her work while she is gone (payroll, inventory, orders). She makes me come in on my days off for interviews (she can do them herself, she just “really wants my opinion”), meetings, you name it. She has never done that. She even asked to switch MY vacation time (which I never take, but it was my anniversary with my partner so I thought why not?) so SHE could have it because it “worked better for her” and essentially took my vacation. My manager has taken almost every opportunity to take advantage of me. She has left on week long trips every month and expects me to do all her work while she is gone (payroll, inventory, orders). She makes me come in on my days off for interviews (she can do them herself, she just “really wants my opinion”), meetings, you name it. She has never done that. I was so upset but I let it slide because I thought it wouldn't matter in the long run.

But I snapped this week. My manager was going to a conference for work for 3 days, but requested a week off, as always. She said she wanted to spend her friends birthday with them. So she left me alone during month end, which is the busiest time of the month for us, as we try to meet revenue and other goals, and also tying up loose ends for the next month. (We work on a quarterly system, so each month has new goals)

So while she goes on her 5th week long trip this year, she asks me to do interviews for her while she is gone because it's important we find someone for the beginning of August. I have never done interviews by myself, that is entirely her job. She then asked me to make and submit orders for retail, AND to do retail inventory by myself. She was essentially making me do all of her job, when she could've done it after her training at the conference (it was only 9-3) or not taken yet another trip if it was this important. She wanted all of this AND for me to train our new people, AND stay on top of my daily duties and goals. I was so done.

Before this trip I asked if I could have a raise, and she said based on the tier system of pay for assistant managers, the 3rd tier is for AMs who are ready to transition to manager and who know everything. I am the only assistant manager who does all that I do, and now she makes me do her job AND not get compensated correctly because she doesn't want to lose me. She would actually have to do her job

I have an interview on Monday and if it goes well, I'm leaving. And she will just have to do her job herself, because I'm done doing it for her.
