People with a degree but that do a less qualified job, what do you do?

I graduated as software engineer and worked in that field for several years. At the beginning the hours were long but the salary was really good and after work I felt really free and comfortable, I loved the job. But since 2021 my salary increase were consistently lower than inflaction, I got an insane amount of mandatory extra hours and a sequence of absolutely crazy managers who didn't understand where their authority end. I changed severe different megacorps and everyone was a copy of the other, it starts good and soon after they lower the quality. I searched for other jobs in the same field but simply the salaries were lower than what I did when I was an undergraduate or the companies asked for extremely long hours for just a normal salary. I quit and stated working in retail. The salary is low as I expected, instead I was surprised by the amount of graduated among coworkers. I'm a simple clerk in an average shop and almost every single coworker has a degree, some have even masters.

How we reach this point, how we arrived at having so many skilled workers in low wage positions and having many positions with huge requirement but with terrible pay?

People who lived my same experience, what did you do to improve your condition? (Don't just say send 1000 resumes online or to agencies, I've already done, the offers are simply not good)
