Seeking Advice about Doctor’s Appointment

I have a quick question for you all about a situation involving my wife and her job. She saw the doctor this past Friday (1/20) and was told she needed a procedure done. They scheduled the procedure for next Friday (1/27) and she was told she would need to be off her feet and resting for 4-5 days afterwards. My wife immediately informed her employer and asked for that Friday (1/27), Monday (1/30), and Tuesday (1/31) off. She also indicated that she would bring them the doctor's note. Her employer replied that they could let her take Friday and Tuesday but that because the schedule for Monday was already written, she would need to find coverage for that shift. Her employer replied that they could let her take Friday and Tuesday but that because the schedule for Monday was already written, she would need to find coverage for that shift. The store she works in is very short staffed. In this situation, if she were not able to find coverage, would it be legal for her employer to issue her a write up? Even with a doctor's note and a doctor-mandated period of rest?

For reference, she works in Oregon.
