The boss thinks she can dictate how I take care of my family affairs because it is the last few days of me leaving the company. Thoughts??

Resending this for your notice. 

Email 1 from XYZ: ~7:30 am
We are in the position where we will have to accommodate this given the late notice.  There are only 4 days left of your work and I would greatly appreciate if you could please arrange for appointments to be rescheduled to weekends or after 31 July, or for other alternative arrangements to be made.  Given the extensive disruptions to work this is a very understandable and reasonable request. There is much to do and other tasks came out of yesterday’s meeting with 'someone' which need to be attended to. 

Email 3 from me: ~8 am
Thank you for your email and approval. It was not possible to reschedule this appointment hence the request. I also want to stress that I am not yet aware of who I have to provide the handover to which I have been requesting information about since the week before last. There should have been someone who I could provide knowledge transfer and PMO responsibilities.

Email 2 from XYZ: ~8:10 am
As there are only 4 work days remaining alternative options can be arranged. If you are not aware of who to handover to than take ownership and responsibility, continue to follow up with ABC or whoever else as necessary and determine this.
