Small biz owner seeks opinion of anti workers

Recently I have interviewed some candidates for a position in the 50-75k/yr salary range. I only have one position available but a few candidates would be good fits in the future I think. The in person interview was about an hour and a half long and they probably put about 3 hours or more of their time into the entire application/interview process. I’d like to send them hand written thank you cards – would it be viewed as nice or perhaps insulting to include a visa gift card? If nice – what is an amount that you think would be appropriate? Another thought was a small gift based on their answer regarding their hobbies outside of work but that seems a little too personal to me…. Thoughts?
