Need advice for employment opportunity

I recently was offered a position at a company, all they needed was me to confirm I did indeed want it. I said give me a day or two and I'll send an email. They said sure. The following day I got a call from another employer. It's the same hourly wage but in a field I'd prefer to be in. It's a night shift position so technically I don't need to pay daycare for my youngest. The call seemed promising but I'm waiting to hear back for a second interview with the boss there. A little background on me. I retired from the Navy due to medical reasons after 15 years. I get 100% VA disability, my wife works and nets $70k+ a year. We are alright financially. So I'm not pressed to take either job. That being said. Do I accept the one and hope the other calls…

That being said. Do I accept the one and hope the other calls me back? If I do that with employer 1 and I go through the process of getting a drug test and physical, can there be any blowback of I do those things then jump ship to the other job I actually want before I actually start working at employer 1? Since it obviously cost them some form of money.
