What is up with employers and their non-compete clause? Seem so desperate.

Wife and I moved to another state, both are skilled in our trade. She found some part time work in the city without an issue, however she was being paid as an independent contractor. We went ahead and filed for articles of organization with the state, got a business license, bank account, and insurance. Immediately, some of her “employers” pointed to a non-compete that she signed when she first stated working with them. Seemed silly all things considered, nethertheless she no longer works with them. I work full time remotely, same thing, employer somehow found out about our LLC (totally unrelated industry) and immediately had me sign an “updated” NDA that includes a super vague non-compete clause. What is up with these people? I get the point of a non-compete agreement, but it seems to be misused. I dont think I will sign mine, even though it's vague AF, it…

I get the point of a non-compete agreement, but it seems to be misused. I dont think I will sign mine, even though it's vague AF, it would suck if I lose my position for whatever reason and I can't venture off on my own.
