Why so many interviews?

When I first started working every interview I had was one and done. I applied to Lowe's 4-5 years ago and had 3 interviews, one with a regular supervisor, one with HR and one with the district manager. To be a cashier… I've applied for 10 jobs over the last week or so and every single one was a 20 minute interview over the phone to be follwed by a more in depth interview in person. This is of course after spending 30-45 minutes filling out the application and taking the “personality test” Despite supposedly unemployment being super low, I've never seen such stringent screening for super entry level positions. I'm talking cashiering or putting away freight.
