Has anyone quit while undergoing other interviews?

Basically we have gone through a merger and my job is an absolute s h i t show. We’re all overworked and underpaid and things are just terrible. Anyways, I have solid experience so I have some interviews lined up. And I know I should probably get an offer in my hands before giving my 2 weeks notice (I work in a tight knit industry where people can screw you over if you “burn bridges” so I don’t think I can get around that). But I’m considering bouncing while I’m still job searching. Is this a terrible idea though? I don’t want it to look like I got fired because if I left it would be voluntary. But it would give me proper time to focus on my interviews and also have some time to breathe before starting a new job.
