Fair way to pay servers-15-20% of sales

This cannot be an original idea, I’m sure i heard it from someone or somewhere. Why not pay all servers a % of sales? Solves the tipping problem, esp when they have to deal with a$$holes that run them ragged and leave a $5 tip on a $200 tab. I was told years back by someone who delivered pizzas in college that delivery drivers made a % of sales, dorm deliveries didn’t tip much but you had so many on Sunday nights (dorm cafeterias in his college were closed Sunday nights) that the % of sales made up for it. Apartments tipped better, he said, but you didn’t get as many of them and/or you had to drive a lot longer to deliver to them. But if that worked for pizza delivery, why wouldn’t it work for restaurants? Other than the obvious greed of owners/mgrs. Then all servers would make…
