I'm a cook and work around fryers. The maintenance guy came in and replaced the heating element in one of the fryers with brand new ones, which was great. After about an hour of cooking the fryer started smoking real bad and set off an alarm saying “too hot” so I checked the temp, IT WAS AT 456 DEGREES?! I shut the fryer down super quick and got the manager. She didn't think it was a big deal, then was surprised later when I couldn't cook as much chicken. It's like she was completely oblivious to the fact that the fryer almost caught fire, and wanted to know why I wasn't using it. 🤦️
