David Graeber paradox

So I’m reading and listening to David Graeber’s theory of bullshit jobs and it got me thinking of a paradox in our world regarding bullshit jobs. Why is it that the jobs that are essential to our society and is integral for things functioning paid like shit? (retail, warehouse, construction, etc). And the non-essential jobs (bullshit jobs) get paid generally far more handsomely than the essential jobs (middle management, regulation inspectors, government red tape and buerocrats, much of c-suite, etc) Would love to hear some feedback or if maybe I’m mistaken.
