Employer changing contract. I refused.

I’ve signed a 6 months contract back in February, and they want to extend it for another year. During that 6 months i’ve noticed they’re constantly changing their policies that were clashing with my existing contract. One of many examples my working hours was stated as 9-5. But time and time again they asked me to be available on ungodly hours of 5am, and was uncompensated. There were no clause of banning me from taking freelance gig but the HR did a sudden announcement on none of us can take them. So when they asked me for contract extension I renegotiated my benefits , requested some adjustment to my contract to make sure that those things wont happen to me and was approved. Last week hr approached me to sign a revised contract that put me in previous compromising deal. Is this normal? Can companies actually change policies even if…
