Feeling stressed and guilt tripped

Situation: We are a small, independent green grocers with 5 members of staff. The boss is about to have a baby, but she only hired a PT member of staff to replace her FT hours. Me and another young member have staff have pretty much split the FT between us. 3rd member of staff has young kids and 99% time says no to any overtime. It's just making me so frustrated because I feel guilty and angry. I don't want more hours for personal, and tax reasons. I also have a small pet sitting business which I hope can be expanded as soon as I learn to drive. It also makes me stressed for Christmas hours and if any of us are ever ill at the same time.

I just want her to hire someone else as a minimum, why she replaced FT with essentially lunch cover hours I'll never understand!!
Thank you, rant over haha!
