I want to LEARN, not more MONEY

Let me tell you my story. I started working at the company I'm currently in when I was 24 years old (2016). They taught me the trade until I became self-sufficient. A couple of years ago, I asked to be assigned to a new role to grow professionally. My boss always told me that he would allow it, but first, he needed to find someone to replace me in my current position. In all this time (3 years), he hasn't been able to find anyone (it's a complicated job with low pay). Every time I complained about it, I was given a raise, but nothing ever changed. A few weeks ago, I hinted that I would leave if things didn't change quickly (especially since they keep hiring people for the role I wanted to have). A few weeks ago, I hinted that I would leave if things didn't change quickly (especially since they keep hiring people for the role I wanted to have). At this point, they decided to hire a 60-year-old experienced person out of fear that I might leave my position by resigning.

The question I would like to ask is this: should I pass on all my know-how to this person, all the scripts I've developed in my spare time to speed up the work, all the libraries I've written, or should I erase them and make them start from scratch as I had to?

Do you think I've waited too long for my company to give me an opportunity in this role?

I really don't know what to do; I feel like I'm being taken for granted, but at the same time, I like my colleagues and wouldn't want to change companies. However, the desire for professional growth is much stronger.
