Is it legal for an at will employment state to make you sign a contract for employment?

First time posting on here but I know this is the place ill find the right answer. Im about to start a new job as a waiter just had my first day of training today. Everyone seemed cool the job duties itself seemed fine but the guy training me pulls me aside within 5 minutes of me being there and is like “theres a contract theyre gonna want you to sign before you get off training. You wont be able to quit without a 2 week notice or they can sue you. If you make any mistakes on your orders the money comes out of your check automatically” I know for a fact in my state is an at will employment state, and im pretty sure its illegal for a restaurant to make their employees pay for breakage or simple mistakes. The problem is when i left today they want me back tomorrow with the contract signed. Probably not gonna take this up but just want everyones thoughts is this even allowed?
