Keep trying to quit, boss making it difficult to

So I tried to quit my job at the 6 month mark and was really stern that it was what I wanted. My boss freaked out and pretty much gaslit me into staying by making my job easier for about a month. I remember giving every reason in the book for why I wanted to quit and he literally would not give up on making me stay. I have pretty bad anxiety and this was really shitty. Since then, several important people have quit, and he has given me their workload with no raise. I can’t take the stress and want to put my notice in, but he made a huge deal thst they only gave a 2 week and it should’ve been a 1 month notice. None of us have any contract stating that’s needed. How would you go about this? I’ve never had a manager not accept my resignation and wish me luck, and he freaks out and tries to convince me for over an hour to stay. I do not want that to happen again. There is no HR. Also, there’s no way I’m giving a month notice, that’s crazy so I know he’ll be even more upset. Any advice?
